Recipe: Buffy’s ‘Love Makes You Do The Wacky’ Cake

It’s hard to believe that Buffy the Vampire Slayer first aired 20 years ago. When home sick a few weeks ago, I started a rewatch of the series, not even realizing that its anniversary was coming up.4fc1b158b8e5839d817736796a373bcbAnd to answer the big question of any nostalgia entertainment, “Does this still hold up?” the answer is an unequivocal “Yes.” As March is Women’s History Month, and with so much focus lately on women’s rights – a strong female hero is always a win. Even 90s fashion is starting to creep its way back into style – so some of the clothes Buffy sports don’t look quite so out of place today as they did when I last rewatched the series a few years back.

And if you haven’t checked it out yet, Buffy’s story continues in Dark Horse’s Buffy the Vampire Slayer series.

So in the spirit of “crazy stuff;” wacky cake is an egg and dairy free cake from the Depression era. It’s wacky that it’s mixed in a pan and needs no eggs and butter milk, yet is still yummy. Give the following recipe, adapted from Betty Crocker, a try!

Ingredients:

1 ½  cups all purpose flour

¾  cup sugar

¼  cup cocoa powder

1 teaspoon baking soda

½  teaspoon salt

⅓ cup vegetable oil

1 tablespoon vinegar

2 teaspoons vanilla extract

1 cup water

Crazy Stuff: You can also include about a ½ cup of mix-ins in the cake batter. It’ll make it more true to its name. Some ideas: chocolate chips, peanut butter chips, chopped up candy bars, M&Ms, chopped up Oreos, sprinkles, chopped toasted nuts, shredded coconut … the list is endless. (Optional, but fun and delicious)

Topping:

Confectioners sugar

Equipment:

8 inch square baking pan

Toothpick

Preheat oven to 350 degrees.

Directions:

  • Whisk flour, sugar, cocoa, baking soda, and salt together in baking pan until well combined. Add liquid ingredients and mix until no streaks of flour remain, being sure to scrape the corners of the pan so everything is thoroughly mixed in.
  • If adding some extra mix ins, fold them gently into the batter. Then sprinkle some more on top. In my version, I did chopped Oreos and mini M&Ms.
  • Bake until toothpick inserted in center of cake comes out with a few crumbs attached, 25-30 minutes. Let cool then dust with confectioners sugar.
